Romanesco cabbage (Brassica oleracea var. botrytis) is a variety of cauliflower.

Origin & Culture


Although it is an old variety, its introduction in France is relatively recent, it is cultivated there in great number since the years 1990, especially in Brittany (regions of Saint-Pol-de-Léon and Paimpol).

Smell


Preparation advice


Cut the romanesco into florets and steam or boil them. Excellent in a gratin or as an accompaniment to fish or meat.
