Scientific and botanical name
Solanum tuberosum var: Ratte (Solanaceae family). Other names: Originally called Quenelle de Lyon, Corne de Bouc or Corne de mouton.
Coloring
Pale yellow in color.
Origin & Culture
The ratte was born in 1870 and was listed in 1935. It had almost completely disappeared before being brought back into fashion by great chefs. Considered the “ultimate” potato, it is harvested from August to May.

Preparation advice
The ratte can be declined in multiple ways but it is nature, with a point of butter, that it reveals all its gustatory qualities.
